伊藤忠製糖㈱では黒酵母β-グルカンに水熱処理を施すことでその粘度を下げ,素材としてのハンドリングを向上させることに成功した.現在,粉末品の商業ベースでの販売に至っている(商品名:KBG,クルルのβグル).本稿ではKBGの特徴,立体構造,アプリケーション例,機能性について紹介する.立体構造解析ではNMRにてKBG一次構造を解析し,β-(1,3)-主鎖6残基毎に4残基のβ-(1,6)-グルコース残基が規則的に分岐した構造であり,比較的分岐度が高い(67%)ことが明らかとなった.またKBGは水中では三重螺旋構造を,DMSO中ではランダムコイル構造を形成していることを確認し,この構造転移現象はDMSOの濃度依存的に可逆的に起こっていることも明らかとなった.KBGの用途開発の例として酵素分解法によるゲンチオビオースの生産を検討し,最終的に基質重量の40%のゲンチオビオースを得ることができ,さらには活性炭クロマトグラフィーによる高純度分離を可能にした.生理活性試験では,in vitro での試験系においてKBGがLPSによる炎症反応を抑制することを確認し,さらには水熱処理の時間延長よって炎症抑制効果も依存的に増強されることを明らかにした.
